Soju is a distilled spirit made in Korea that is typically made from rice but can be made from various other distillates including barley, sweet potato, wheat, etc. The name is derived from from Chinese characters which mean "burned liquor."
Can range from light and nearly odorless to more earthy petrol like versions.

Rice soju can be very clean, almost like vodka, or it can retain some flavor from the rice. Barley soju can have a malty grain character, and potato soju can have sweet notes and an earthy and smoky petrol-like character.
Typically bottled at around 20% alcohol by volume but it can be made in versions stronger than 40%.
